These taco shells are perfect for a movie night or get together (when we’re allowed!) as you can make the shells in advance. Or to make it even less labour intensive, put the fillings out and guests can fill their own shells!

Mediterranean Tart

– 10 servingsIngredients
3 x small soft white tortillas
Baby Spinach leaves
Vegan yoghurt or sour cream if vegetarian
Vegan Grated cheese, or grated mozzarella if vegetarian
Garlic or chilli oil
A sprinkling of chopped spring onion
A sprinkling of dried chilli flakes
- Mixed Bean Salad
1 tin of kidney beans, drained.
1 small tin of sweetcorn, drained.
1 diced red onion
A handful of stoned sliced black olives
A small handful of chopped coriander
1 clove of crushed garlic
- Pico De Gallo
2 tomatoes, flesh removed then diced
1 green chill diced, I like the seeds in for heat, but you can remove if wished
1 red onion diced
A small handful of fresh coriander chopped
A sprinkling of chilli flakes
1-2 cloves of chopped garlic
Juice of 1 lime
A splash of olive oil
Combine all ingredients together and chill until needed.
Directions
- For the taco shells
- Warm the tortillas in a hot dry frying pan,
- Put the warmed tortillas into the Tortilla Shell Pans. If you don’t own these moulds, hunt around the house for suitable shapes that are oven proof – ramekins, upturned small bowls, giant muffin trays or baby bundt tins, will all work a treat.
- Warm in the oven until golden brown, allow to cool and remove, they will hold their shape as a perfect edible Mexican bowl.
- For the Pico De Gallo
- Combine all ingredients together and chill until needed.
- For the Bean Salad
- Combine all ingredients together and chill until needed.
- Filling your shells
- Start with a few leaves in the bottom of the shell,
- Layer with bean salad, then pico de gallo.
- Top with a little yoghurt/sour cream, and cheese.
- Finish by sprinkling with the spring onions, and a little garlic or chilli oil.
